Miso Marmalade Salmon (Oven-Baked!)

Full of umami from red miso and balanced with the sweetness of marmalade, this dish is quick, easy, and incredibly satisfying.With just a few ingredients and no cutting required, there’s no long prep involved.Simply prep the salmon, mix the glaze, and pop it into the oven.

Ingredients

  • 1 salmon fillet (about 225 g), any kind: King, Coho, Sockeye, etc.

  • a pinch of salt

  • neutral oil for brushing the aluminum foil

for the Miso Glaze

  • 1 tbsp red miso

  • 1 tbsp orange marmalade


Instructions

  1. Preheat the oven to 400°F (204°C). Set the rack in the center.

  2. Pat the salmon dry with a paper towel. Sprinkle a pinch of salt on both sides. Let it sit for 10–15 minutes.

  3. In a small bowl, mix the miso and marmalade.

  4. Line a baking sheet with aluminum foil and lightly brush with neutral oil to prevent sticking.

  5. After 10–15 minutes, gently pat the salmon dry again.

  6. Place the salmon on the foil and spread the miso mixture evenly over the top. If you have extra sauce, spread it on the sides too.

  7. Bake for about 12 minutes, or until the internal temperature reaches 125°F, or to your preferred doneness.

  8. After baking, switch to broil and cook for about 90 seconds to lightly char the top.


Cooking Notes

While the USDA recommends an internal temperature of 145°F for salmon safety, many culinary professionals prefer cooking salmon to a lower temperature (125–130°F) for a more tender, juicier texture. In this video, the salmon is oven-baked until just tender, then briefly broiled. As always, cook your salmon to your preferred doneness.
