Quick and Easy Homemade Ponzu

Ponzu is a soy sauce–based condiment with a hint of dashi and a refreshing tang. It pairs perfectly with so many dishes—whether as a dipping sauce, a dressing, or a marinade.
It’s one of those staples I always want to keep in my fridge. But sometimes I forget it’s running low and only realize I need it after I’ve already started cooking dinner! And of course, I don’t want to run to the store once I’ve begun cooking.
That’s when this homemade ponzu comes in handy. It’s quick, easy, and made with simple ingredients—ready in just minutes!
Ingredients
3 Tbsp soy sauce
2 Tbsp lime juice
1 Tbsp rice vinegar
1 Tbsp mirin(or Mix of 1 Tbsp sake and 1 tsp sugar)
2 pinches dashi powder
Instructions
Add all the ingredients to a small saucepan.
Bring to a boil, then cook for about 1 minute to cook off the alcohol.
Transfer to a small bowl.
Cool it down before using.
Cooking Note
If you don’t have mirin, make a quick substitute by mixing 1 Tbsp sake with 1 tsp sugar. Stir until the sugar dissolves completely.
