Ingredients
Japanese Short-Grain White Rice: 2 cups
Fresh Ginger: 15–20g
Carrots: 40-45g
Chicken Tenders or Breast: 1–2 pieces
Chicken Seasoning: 1/4 tsp sake + pinch of salt.
Cooking Liquid: Chicken stock/broth (filled to the rice cooker's 2-cup mark) + 1/8 tsp salt.
Optional Garnishes: Green onions, shiso leaves, sesame seeds, seaweed (nori), or chili crisp.
Instructions
1. Wash & Prep the Rice
Rinse 2 cups of Japanese short-grain rice in a bowl, changing the water 3 to 5 times until it runs clear. Drain thoroughly in a mesh strainer.
2. Prep the Aromatics & Chicken
Peel and julienne 15–20g of fresh ginger and 40-45g of carrots into thin matchsticks. Remove the white tendon from 1–2 chicken tenders and cut into bite-sized pieces. Toss the chicken with 1/4 tsp sake and a pinch of salt to keep it tender and eliminate any unwanted odors.
3. Layer in the Rice Cooker
Transfer the drained rice into the rice cooker pot. Pour in your chicken stock up to the 2-cup line, add 1/8 tsp salt, and give it a gentle stir. Evenly place the ginger, chicken, and carrots over the top of the rice. (Note: Do not mix the ingredients into the rice before cooking—keeping them layered on top ensures even cooking!)
4. Cook & Fluff
Close the lid and start your rice cooker using the "Mixed Rice" (Takikomi) mode or standard "White Rice" setting. When finished, open the lid and gently fluff everything together using a rice paddle.
5. Season to Taste & Serve
Since salt levels in chicken stock vary by brand or homemade batch, give the rice a quick taste test and fold in a extra pinch of salt if needed. Serve warm in bowls with your favorite toppings, or let it cool slightly and press into onigiri!
