Easy Tuna Takikomi Gohan

Takikomi Gohan, or Japanese mixed rice, is the taste of fall for me. I love adding plenty of mushrooms — shiitake, maitake, oyster, shimeji — whatever’s available!


With tuna and mushrooms, the rice becomes rich in umami, so just a few simple seasonings bring out amazing flavor. It’s perfect for a quick lunch or an easy dinner on busy weeknights.


Ingredients

  • 2 rice cooker cups medium-grain rice

  • 1 can tuna (lightly drained) * In the video, I use Solid Yellowfin Tuna in Extra Virgin Olive Oil. I like to lightly drain the oil.

  • 40–50g/1.76oz shiitake mushrooms(2-3 shiitake)

  • 80g/2.82 oyster mushrooms

  • 60g/2.11oz carrot

  • 2 tbsp soy sauce

  • 1 tbsp mirin


Instruction

  1. Rinse and drain the rice for 10–15 minutes to remove excess water.

  2. Place rice in the rice cooker inner pot and add soy sauce, mirin, and water until until it just reaches (or slightly below) the line for 2 cups of white/mixed rice. Mix to combine.

  3. Spread carrots, tuna, and mushrooms evenly on top.

  4. Cook on Mixed Rice or White Rice setting.

  5. Once done, fluff the rice and mix ingredients evenly. Add salt to taste if necessary.

  6. Garnish with chopped green onions if you like.
