Negi Shio Dare(Japanese Green Onion Sauce)

I can’t believe it’s been 16 to 18 years, but back when I was in Japan, my absolute go-to order at Matsuya was their Negi Shio Buta Don (pork bowl with green onion sauce). That dish was my introduction to this delicious sauce! Around that time, Negi Shio really started booming in Japan, popping up on all kinds of menus and store shelves—including Negi Shio Yakisoba.

Personally, I still prefer classic sauce for my yakisoba, but spooning a little Negi Shio Dare on top as a garnish adds an amazing extra burst of flavor! It pairs wonderfully with grilled meats, cold tofu, and so much more. I hope you enjoy it!


Ingredients

serving: enough for 1-2 Chicken thighs

• 60g Green onions (scallions or Negi), finely chopped

• 2 tbsp Lime juice

• ¼ tsp Asian chicken bouillon powder (Torigara)

• ¼ tsp Salt

• ¼ tsp Sugar

• ⅛ tsp White pepper

• 1 tbsp Sesame oil


Instructions

  1. Mix lime juice, chicken bouillon, salt, white pepper, and sesame oil until dissolved.

  2. Add green onions and mix until coated and softened!


Negi Shio Chicken Thighs

  1. Season chicken thighs with salt & pepper.

  2. Cook skin-side down over medium heat for 6 mins until golden & crispy.

  3. Flip, cover, and cook on medium-low for 6 mins until done. *internal temperature at 165°F (74°C)

  4. Top with delicious Negi Shio Dare and enjoy!
