Komeda's Coffee Tamago Pizza Toast At Home

My hometown, Nagoya, is famous for its unique kissaten (café) culture. Most cafés in Nagoya, Aichi, and the surrounding areas offer a “morning service” — when you order a cup of coffee or any drink in the morning, a light meal comes with it for free! The meal is usually toast, a boiled egg, and salad, though some places even serve a full Japanese-style breakfast. Many cafés also offer upgraded meals for just a little extra, which is still incredibly generous for what you get.

I used to go out for “mornings” with my family on weekends, and it was always such a nice tradition.

One of the most popular Nagoya-style cafés is Komeda’s Coffee, which now has locations all over Japan. They’re known for their unique menu, and this Tamago Pizza Toast is one of my favorites! Fluffy shokupan (milk bread), creamy Japanese egg salad filling, and cheesy pizza toast on top — it’s the perfect combination.

Ingredients

  • 2 slices of Shokupan or Japanese Milk Bread

olive oil or butter -For the Tamago Salad

  • 2 eggs 20g Japanese mayo (a bit less than 2 tbsp)

  • 1/6 tsp salt (about 2 pinches)

  • 1/6 tsp sugar 1 pinch black pepper

-For the toppings

  • 1-2 tablespoons pizza sauce

  • a few slices of onions about

  • 10g green peppers

  • 2-3 cherry tomatoes about

  • 1/2 cup or a bit more shredded cheese(Mozzarella in the video)


Instructions

  1. Making Egg Salad:

    Bring water to a boil. Gently place the eggs straight from the fridge into the boiling water. Cook over medium heat for 11 minutes and 30 seconds. Drain, run cold water over the eggs a few times to cool, then let them sit in cold water for 5 minutes. Gently tap the eggs to make small cracks all over the shell, then peel. Separate the yolks and whites. Mash the yolks in a bowl, then add Japanese mayo, salt, sugar, and black pepper. Mix until smooth. Chop the egg whites and mix them into the yolk paste.

  2. Thinly slice onions and green peppers, and halve cherry tomatoes.

  3. Line a baking sheet with aluminum foil and place the bread slices on top.

  4. Lightly spread olive oil on one side of each slice (butter works well too).

  5. Spread the Tamago paste on one slice, then cover it with the other slice. Spread pizza sauce on top.

  6. Add the toppings evenly, and finish with the cheese.

  7. Set the oven rack to the top or upper position. Broil for 3-5minutes(less than 5) or until the cheese melts, bubbles, and is nicely charred to your liking.


Cooking Note

  • Adjust the amount of toppings to your liking! You can also add ham, salami, or other ingredients that don’t need much cooking.

  • I like bread slices that are 2–2.5 cm thick. Thicker slices taste great too, but they’re a bit harder for me to eat!
